Cortadillo de Cidra is one of the most traditional of Spanish sweets. Flaky moist shortbread is baked around a downright old-fashioned and delightful filling called 'cabello de ángel' - delicate strands of melon candied in syrup, aptly named 'angel hair.' Each one is sprinkled with toasted sesame seeds which add the perfect little crunch.
When you pass the windows of sweets shops in the city of Cordoba, you are sure to see stacks of these delicious pastries beckoning from the window. In fact, our supplier started as a small pastry shop over 100 years ago. Cortadillo de Cidra pastries were their signature product, and they are still made following the same family recipe - four ingredients, with no preservatives.
