Yemas de Santa Teresa are the famed candy from the medieval walled city of Avila. Completely artisan, each one is a crisp sugar shell fashioned by hand, which cradles a heavenly sweet egg yolk. It creates a wonderful composition that you won't forget.
The yemas are remarkably delicate on the palate. As they melt in the mouth without pressure, they have a pleasant crunchy texture due to their sugar crust. A little lemon juice balances the natural sweetness.

The original Yemas de Santa Teresa are associated with a convent dedicated to Santa Teresa, where for hundreds of years the sisters would prepare them from yolks donated by the neighboring wine makers, who used only the whites of eggs to clarify their casks of red wine.
Avila egg yolk cakes are made in three confectioner's shops in the city. In the late 19th century, Sr Isabelo Sánchez adapted the recipe from the convent. His cake shop, which still exists today, sells the brand 'Yemas de Santa Teresa'.
