Cecina is a delicious, tender cured beef, a Spanish treasure that has its origins thousands of years ago. Now this tradition reaches a new pinnacle of flavor! Intensely marbled, free range Kobe beef is carefully cured by a small family company in Chile, following the ancient methods of the fine Spanish curing houses. The balance of intense meaty flavor and succulent marbling puts this cecina on a level all its own.
Because beef cannot be imported from Spain to the U.S., we searched everywhere for another way to share this great Spanish cured meat. We were thrilled to find a small producer in the countryside of Patagonia, Chile, dedicated to producing artisan cecina. Pedro and Barbara Grez have made it their passion to cure small batches of the very finest cured meats, including this incredible Kobe-style Wagyu cecina.
Cecina from León in northwest Spain is typically cold smoked over oak wood. But our supplier decided that the subtle flavors of the Wagyu beef would be overwhelmed by the smoke, so he decided on a subtler curing method. After about 4 months of curing, this premium cecina is tender and delicious, a mouthful of cured beef goodness like you have never experienced.
Serve this delicacy thinly sliced on a warm plate to bring out all of its subtle flavors. Like a great Spanish jamón, it is best savored on its own, paired with a glass of good wine.
León, in northwest Spain, is the heartland of the cecina tradition. The region has a tradition of cattle farming, and beef has been cured and smoked since Roman times. The producer of this Patagonian cecina follows this age-old tradition of Leon, while adding a new level of quality by using Wagyu beef.
This premium Kobe-style cecina comes thinly sliced and has a shelf life of four months from date of production. Keep refrigerated and unopened until ready to serve. Once opened, consume within a few days. This cecina does not require cooking, but can be added to recipes.
