Our authentic Rosara fabes are grown and prepared only in the Principality of Asturias. There they have a long tradition of preparing hearty feasts using this local bean. They take almost twice as long to grow as comparable beans, and are tended by hand in small plots. This long growing period makes them drier and denser than other beans, and allows them to absorb wonderful flavor without breaking up during cooking.
Gourmets insist that authentic Asturian fabes can only be prepared in Asturias, and nowhere else. And the beans have to be grown only on a farm within the Principality of Asturias – not even in neighboring León.
As a matter of fact, the most famous restaurant to serve fabada is La Machina – and it doesn’t even have a sign. Everybody (who is anybody) knows! We drove around for an hour outside the capitol of Oviedo looking for it, and kept passing it by. You can identify it by the miniature model of La Machina (Railroad locomotive) hanging on a sign post.
