A shop-keeper once told us that the dry climate of Spain makes the fruit 'suffer' and therefore endows it with more flavor and character. Fruit from mild climates is 'silly', he said. Our hand-made preserves have a very high fruit content and not too much sugar so you can enjoy the fruit's full flavor.
