Torrefacto Coffee from Spain Good coffee is ubiquitous in Spain. Every restaurant and bar serves rich, full flavored coffee fresh from the espresso machine. Whether it be a 'cafe con leche', 'cortado' or 'cafe solo', having a cup once or twice a day is a Spanish ritual.
The secret to Spanish coffee is the Torrefacto process of roasting. About half of the beans are glazed with sugar during roasting. During this caramelization the sweetness of the sugar is roasted away, creating a deep rich flavor.
